2 cups flour
2 teaspoon cinnamon
3 teaspoon baking powder
1/2 teaspoon salt
2 eggs
1/2 cups oil
1 cup brown sugar
1 cup milk
1/2 chopped nuts(optional)
- In a mixing bowl blend the eggs, oil, brown sugar, milk and nuts if desired.
- In a separate mixing bowl, mix the flour, cinnamon, baking powder, and salt.
- Gradually mix in the flour mixture to the liquid mixture.
- Fill paper lined muffin cups about 2/3 full.
- Bake at 375 for 20 minutes. Makes 18 muffins.
