1 cup old fashioned oats
1 cup whole wheat flour
1/2 white flour
1 teaspoon cinnamon
1 teaspoon cinnamon
2 teaspoons baking powder
1/2 teaspoon salt
3/4 cup brown sugar
2 eggs
3/4 cup milk
1/4 cup oil
1 teaspoon vanilla
Directions
- In a small bowl, combine the oats, wheat flour, white flour, baking powder, cinnamon and salt. In another bowl mix the eggs brown sugar, milk, oil and vanilla. Stir into the dry ingredients just until moistened.
- Fill muffins cups 2/3 full. Bake at 400 for 15-17 minutes. Cool for 5 minutes. Serve warm. Yields 12 muffins.
