Recipe adapted from The Sister"s Cafe
1 cup sugar
2 eggs
1/3 cup oil
1 1/4 mashed bananas
1 teaspoons vanilla
1 1/2 cups flour
1/2 cup cocoa
1/2 teaspoon salt
1 teaspoon baking soda
1 cup chocolate chips
- Preheat oven to 350 degrees. Spray the bottoms of a 8x4 inch loaf pan.Dust it with flour after it has been greased.
- Combine flour, cocoa, salt, baking soda, in a medium bowl. Set aside.
- Beat the sugar, oil, and eggs in a large bowl at medium speed until combined.
- Beat in the banana, and vanilla at low speed.
- Beat flour mixture into the banana mixture at low speed, just until combined.
- Stir in chocolate chips.
- Spoon batter into prepared pan.
- Bake for 60-70 minutes, or when toothpick comes out clean.
- Cool ten minutes. Remove from the pan onto a cooling rack to cool completely. Cut and enjoy.
